History

The Peranakan (Straits Chinese) are well known for their traditional cakes and colourful pastries. The legendary Peranakan delicacy otherwise known as NyonyaKueh. In the old days, the married Nyonya (male Peranakan are known as Baba) learned to make cakes from the Malay neighbours and integrated Chinese cooking style with local exotic ingredients. These cakes and pastries were later known as NyonyaKueh and were made and served as snacks when the Nyonya entertained guests at home. This unique fusion is a blend of the best culinary techniques and recipes of both Chinese and Malay cuisines, and truly reflects NyonyaKueh as a special confectionary with a regional flavour of Southeast Asia.

This stall is all of the traditional pastries that sold by them are homemade and fresh made everyday. The owner would not sell those left over pastries to customer. By the way, we can’t found their pastries in other places because they don’t sell to others for selling purpose, so the only way to eat them is go buy yourself and the only have one outlet. And they actually provide a lot of variety for customer. Beside that, the taste of their pastries was maintaining since years until now, so the customer will only keep increasing from day to day.

Value Proposition

The food stall that we chosen is Kuih Muih Fong & Meng, that located in Kampar. It is a 
local traditional pastries stall that already been operated for quite some years.




Basically when the stall open the crowd will queue up long.



This is one of their best seller, this made of gluten rice and the ingredient inside is peanuts. For this they only made 300 pieces per day.




We called this "Angkukueh". The orange colour kueh is one of the most traditional and the purple in colour is mixed with black sesame the ingredient inside is black "Tousha". For the green colour, it is pandan flavour and there is coconut.




This is one of the special that i had never try before.


Love this the most. It is the combination with cassava and sago.

Group opinion and reason of selection

We have chosen Kuih Muih Fong and Meng as one of the stalls that will be discussed in our study. This is because this stall is one of the famous traditional pastry stall in Kampar. It provides a variety of pastries and has been opened in Kampar more than ten years. Therefore, if the local residents want to buy the traditional pastry, they will prior thinking of Kuih Muih Fong & Meng. would like to buy the traditional pastry from this stall. Besides, they only use the fresh ingredients to make their pastries and will not sell the overnight pastries to their customers. Thus, there always a long queue in front of its’ stalls. 


Classification of E-commerce

Actually, Kuih Muih Fong and Meng is not belong to any categories of transactios in e-commerce because it does not using any computer networks such as internet and intranets to sell their pastries. It only sells its pastries in the stall which located at Old Town Pasar, Kampar. Through verify Kuih Muih Fong and Meng’s nature of transactions, we categorize it as business-to-consumer (B2C) business which includes retail transactions of products services from business to individual shoppers. For instance, Kuih Muih Fong and Meng makes all the pastries themselves and sells directly toward their customers. B2C business can eliminate the middleman. Therefore, Kuih Muih Fong and Meng can sell their pastry at affordable price because they no need to pay the middleman. Besides, they also can build a strong relationship with their customers.


Business models

Business models are a set of a business plan and it will be setting depend on the company, the industry, and so on. A comprehensive business model is composed of a lot of element such as value proposition, the description of all the product that will be provided, target customers, business process and revenues expected (also known as revenues model).

For Kuih Muih Fong and Meng, the most important element of their business models is value proposition because it is the main reasons that the customers make the decision to buy the pastry form them, not from others. The unique value proposition of this stall is their pastries are very tasty and refreshing. Besides, they also have a good sanitary environment. For instance, they cover the pastries with a transparent plastic to prevent the flies bring the bacteria to their pastry.

The main food that provided by Kuih Muih Fong and Meng is a variety of traditional pastries, such as muaji, ang gu kueh (also known as Kuih Angkoo), and so on. Besides, they also provide the traditional Chinese rice-pudding (commonly known as zong zi) and jelly. The setting of the target market is also very important for a business, and it will also affect the location of their stall. Kuih Muih Fong and Meng’s target customer is the people who more prefer the traditional foods. Their stall located at the Old Town Pasar, Kampar where the customer came in an endless stream.

The business process of Kuih Muih Fong and Meng is they make all the pastry by themselves and sell it directly to their customers at an actual stall. Within their business process, there not have any middleman. Besides, they also do not provide the delivery services. Lastly, a revenue models outlines how the organization will generate revenue. For Kuih Muih Fong and Meng, their revenues only generate from selling their pastry because they are a very small and simple business.

As a conclusion, all the elements that has been stated before is very important for Kuih Muih Fong and Meng to generate the revenue and become a profitability business.


Basic approach used in marketing and advertising

Due to globalization, we will touch some culture of other countries and also their foods. Therefore, a lot of food stall that sell the western food or dessert occur in order to get the first-mover advantages. On the contrary, the number of traditional food stall is decreasing nowadays even though there still have some people more prefer the traditional food. Thus, Kuih Muih Fong and Meng set their target market as a niche market which consists of the people who more prefer the traditional pastry. Besides, they use the “small profit and quick return” strategy to sell their pastries. Kuih Muih Fong and Meng does not use any flyer or led advertising method to promote their pastry. They are just using the word-of-mouth to promote their pastry through provide the fresh and tasty pastry. When the customers feel the pastry taste good, they will recommend it to their friends or family.


Recommendations using e-commerce

For recommendation, we suggest Kuih Muih Fong and Meng to create an e-commerce website or online webpages. The main reason is they do not set the fixed off day for their business, they off their business by following their mood. Therefore, the situation that the customers leave there empty-handed always happened even though they go to the stall during its’ normal business hours. If Kuih Muih Fong and Meng post use the e-commerce website (or online webpages) and post an announcement to their customer about they want to off their business on that day, the problem of customer leave their stall empty-handed can be prevented. Besides, they also can promptly inform their customer when the emergency situation happened.

Another reason is they can better understand their customers and interact with them, through using the online website. Because of Kuih Muih Fong and Meng is too busy in their business hours, they do not have they time to communicate with their customer. So, if they use the online website, they can handle customer’s complaint and get the suggestion from their customer.

History

Claypot chicken rice was a traditional delicacy originated in Guangdong Province. Today, it becomes the dinner dish in southern regions such as Malaysia, Singapore and China. Depand the customers’ preference, customers can choose to add in with Chinese sausage, vegetables or dried salted fish in order to enhance the taste of the claypot chicken rice.

Traditionally, the claypot chicken rice is cook over a charcoal stone, by this, it added distinctive flavour to the dish. Restaurant FookKee is one of the stall that retains the traditional way of cooking. Restaurant FookKee must be at least 50years old as the current boss is the third generation handle the restaurant. Traditional cooking method is the main reason for Claypot chicken rice of Restaurant FookKee become popular among customers, because it is more delicious and rich taste compare to modern cooking method. It is quite often to see customers waiting in line outside of the restaurant due to the seat were full house.

Value Proposition

Last Saturday, we went to Restaurant Fook Kee to take our dinner for assignment purpose, We reached around 6.30pm and the place was already crowded. We quickly settled down at a round table

The boss was busy manning all the claypots.





The ingredients are all freshly bought from market.




Selection is as written on the menu board with two main selection, Claypot Chiken Rice with chinese Sausage and Salted Fish version or just Claypot Chicken Rice. The rest would be a selection of vegetables.

After group discussion, we decided to choose the claypot chicken rice which commonly known as “Nga Pou Kai Fan” in Cantonese as our topic. The claypot chicken rice is a must try local dish because it is one of the famous and iconic food within Kampar, Perak. Throughout our researches, there are many shops selling claypot chicken rice in Kampar but the shop that offers the most fragrant and delicious claypot chicken rice is Restaurant Fook Kee. The shop offers the best claypot chicken rice as it is the oldest claypot chicken rice shop which selling in Kampar so the owner possess the recipe of original claypot chicken rice. Another reason is Fook Kee’s claypot is heated by using charcoal instead of gas stove, this makes the rice here very fragrant and cooked to perfection. Thus, we decided to share our opinion with you the best claypot chicken rice that we are tried in Kampar.

There are a host of expenses associated with operating of a restaurant. Since Fook Kee is operating over the years, there should be a clear analysis of expected ongoing costs, revenues and profit margin that shows how the restaurant expects to sustain profitability. Amounts and sources of necessary initial outside financing should be clearly laid out in the business model for a restaurant.

The business model lays out that Fook Kee plans to offer in the marketplace, its marketing plan and financial projections that ultimately show ongoing profitability. Again, these are the important elements in a Fook Kee’s business model.

Basic approach used in marketing and advertising

Viral marketing is a web based word-of-mouth advertising through e-mail or social networks. It is based on the potential of exponential customer growth because the existing customers share the goods or services with their friends. Restaurant Fook Kee using this marketing strategy that focuses on disseminating information and opinions by customers about their claypot chicken rice from one person to person. Additionally, this strategy allows customer to share their opinions via Facebook, Instagram, Blogs or else. Thus, like virus, it spreads information successfully on the internet with the immediate communication. It is easy way and inexpensive.


Recommendations using e-commerce

Due to some limitations, we would like to recommend Restaurant Fook Kee by using e-commerce in order to improve the overall performance of restaurant.

Fook Kee is facing a main problem for a long time which is the huge crowd by customers standing to wait for their foods. Based on our experiences, some diners after us have to wait their claypot rice for 30 minutes before they can have their meal. Fook Kee has the longest queue among all theclaypot chicken rice restaurant in Kampar.The wait is mainly because the person who manning the charcoal stoves have a certain quota when cooking different sizes of claypot. So at the time, he might be cooking just the small version so if you’re ordering a large version, there’s when you need to wait.

In order to solve this problem, we would recommend Fook Kee to implement online order service for customers even we know this restaurant is a tradisional restaurant. By using online order service, Fook Kee can advertise or promote on social media and put up its menu online.

Online order service allows customers to order their food through internet before they come to the restaurant to have their meals. They can also order their foods in advanced.So, the staff or worker can help customers to reserve seat and prepare the ingredients earlier as well. This method can save a lot of time, thus the environment of the restaurant will not occupied by crowds. Furthermore, the customers will not waiting outside to pack their foods to be brought home.It will increase the rate of restaurant’s service and customer’s satisfaction.
